Air Fryer Shortbread Recipe

I have finally adapted my “Mum’s Shortbread Recipe” for the air fryer and I cannot stop making it. Especially when I was having to be dairy free for Rupert and had a craving for biscuits. Shortbread is so easy to adapt to suit all dietary needs and this Air Fryer Shortbread recipe is soooo quick and easy.

As I’ve mentioned before I’ve been slowly adapting my favourite recipes to be made in the air fryer. This Air Fryer Chocolate Crunch recipe, as well as my Pizza Pinwheels and Cheese Twists have been some of my most popular posts on here. We all like the ease of an air fryer these days. And the cost saving! When using an air fryer you don’t need to preheat, and cooking time is typically halved.

Is this Air Fryer Shortbread Recipe Vegan?

This recipe can be easily adapted to make vegan by using an alternative to butter. These are so volatile that you can use almost anything but I often swap to Vitalite to ensure a recipe is Vegan.

How do I store this Shortbread?

Store at room temperature in an air tight tin. They will keep for around 5 days (if they last that long).

Can I freeze this shortbread?

Yes you can, I would recommend freezing the dough before cooking. Remove it from the freeze around an hour before cooking then cook as normal.

What Air Fryer do you use?

I currently have the 7.6L Ninja Dual which can be found here. But would love to upgrade to the bigger one now there are 4 of us in our family. I use this set of silicone trays/metal trays.

Can I make this recipe in an oven?

Of course, just cook for 11 minutes instead of 7.

Air Fryer Shortbread

Prep Time 5 minutes
Cook Time 7 minutes
Total Time 7 minutes

Ingredients

  • 30g caster sugar
  • 60g butter (softened)
  • 100g plain flour
  • 1 tsp cinnamon

Instructions

1. Mix all of the ingredients together in a bowl (you will need to use your hands)

2. Roll out the dough and stamp out to a shape of your choice.

3. Put in the air fryer at 160c for 7 minutes.

They may not look quite cooked but they will continue cooking for a little bit. I like my shortbread quite soft too.

You can add raisins/dried fruits if you wish.
